Mixed Vegetable Dahi Vada

Ingrediants:
- Three potatoes boiled and mashed
- 100 grams grated carrot
- 100 grams cabbage
- 100 grams cauliflower
- 100 grams capsicum
- 50 grams spring onions
- 50 grams coriander leaves
- 50 grams mint leaves
- One inch long ginger finely cut
- Five green chillies
- 100 grams fresh corn
- One table spoon chat masala
- Two cups bread crumbs
- Two table spoon sugar
- One teaspoon pepper powder
- One and half kg dahi
- Oil for frying
- Salt as per taste
Description:
- Grind the fresh corn coarsely in a mixer.
- Finely cut the above mentioned vegetables.
- In a big bowl put all the finely cut vegetables, mashed potatoes, corn, finely cut green chillies, ginger, mint, coriander, salt and chat masala.
- Mix well the content in the bowl and make round or any shaped cutlets that you desire.
- Coat these cutlets with bread crumbs and fry in as little oil as possible in a non-stick frying pan.
- Place the fried cutlets in a round shaped dish or in a small bowl for individual serve.
- Beat the curd with salt, sugar, pepper powder and pour over the cultlets and garnish with chat masala and finely cut coriander leaves.
Conclusion:
Vegetable Dahi Vada is wholesome and healthy diet as it contains fresh vegetables for vitamins and potatoes and corn for starch. As it is not deep fried it contains less oil. Those who wish it to be completely oil free can use microwave.
