Mutton Liver in Green Masala
About the Recipe:
Liver is good for health as it contains many minerals such as iron which is good for growing children and pregnant women. It is easy to prepare as liver cooks faster than meat.
Ingredients:
- One kilogram mutton liver
- One cup grated dry coconut
- Two large onions
- Two tomatoes
- One bunch of coriander leaves
- One small bunch of mint
- Four green chillies
- One inch long ginger
- Eight garlic cloves
- One teaspoon turmeric powder
- One tablespoon bafath masala
- On teaspoon poppy seeds (cuscus)
- One teaspoon fennel seeds
- Four bay leaves, four cardamom, one inch long cinnamon, two star flowers (garam masala) for seasoning
- One tablespoon tamarind pulp
- Four tablespoon oil
Description:
· Wash whole liver and cut into one inch long strips.
· Pour one tablespoon oil in a pan and fry sliced onion, garlic, fennel seed, poppy seeds, grated dry coconut on slow fire and let it cool.
· Make paste of the above masala with ginger, green chillies, mint and coriander leaves and tamarind and bafath masala which turns into green masala.
· Pour one tablespoon oil in another pan and fry green masala paste on slow fire until the oil separates from the masala and keep aside.
· In a pan pour two tablespoon oil and put whole garam masala and fry for a minute and add mutton liver, mix it and cover the pan and cook for two minutes.
· Remove the cover and add green masala paste, salt as per taste, turmeric powder and tomatoes cut into four pieces each and add little water and cook for five minutes in normal fire.

It is advised that the liver should not be cooked for long as it turns hard. The above dish can be used as side dish if it is dry. If one wants to convert it into curry more water can be added. It can also be served with chapattis or jeera rice. If one wishes to add potatoes, round whole small potatoes can be fried in deep oil and added to the dish.

Please note that poppy seeds are banned in the UAE and the Gulf countries. If any one want to bring them in should fry and powder them. Never bring them in raw. You will be in deep trouble if you do that. You can be jailed for life! |
