Hard boil eggs, take out shells, each egg cut into 2 pieces and keep it aside.
* Put tomatoes in the boiling water, after 3 minutes take out from the water and remove skin. Then cut into small pieces.
* Chop very finely onion, ginger and coriander leaves.
* Heat oil in a vessel (non-stick is better) splutter mustard seeds, add onion and fry until it turns to brown colour. Add in ginger and tomatoes pieces and keep it in a low flame for 15 minutes and fry well. Now add chilly powder, turmeric powder, sugar and salt and mix well for abt 2-3 minutes.
* Take out half of this mixture and slowly place egg pieces on the remaining mixture. Now pour the taken out mixture on the eggs and garnish with coriander leaves.
* Heat 1 tea sp. oil in a separate pan and fry urad dhal and pour on this mixture.
* Serve hot with chapati or roti.
